Celebrate the end of winter chill with a sweet gift from the earth! Green Chimneys’ Maple Sugaring & Pancake Breakfast is a longstanding tradition and you are invited to our Clearpool Campus, chock-full of native sugar maples, to meet seasoned experts who will show you exactly how it’s done.

Enjoy the wintry beauty of our wooded campus and a delicious breakfast. Then take a short walk to the Sugar House to see first-hand the maple sugaring process of boiling down sap to make pure maple syrup. Demonstrations throughout the morning will give visitors a complete look at the sugaring process, from tree to bottle. It’s a day of sweet memories and family fun for all ages.

Crowned the best for falconry in medieval times, gyrfalcons were once reserved for kings. As the largest falcon in the world, with exquisite plumage ranging from bright white to deep charcoal, gyrs are revered for their powerful skill of flight. Their long wings make hunting waterfowl from 3,000-feet-high a feasible and fantastical feat. This falcon was flown in the sport of falconry for several years.
